Why choose a VALMOUR kitchen knife?

Or knives are made in France and forged in Charente. Under normal conditions of use, they are guaranteed to last a lifetime.

The blades :

All our blades are made of French high carbon stainless steel, with a hardness rating of HRC 56 to 58 on the Rockwell  scale. This guarantees the solidity, flexibility and long lasting edge retention.

The steel is tempered = heated up to 1050°C and cooled down by oil quenching and by air. Afterwards,  the metal is sanded down, polished and sharpened by a craftsman.

This making gives a regularly increasing thickness to the blades and very fine points, and guarantees an easier and more precise sharpening.

The blades are sharpened with ceramic strips, to obtain extremely fine (and, of course, invisible) and above all perpendicular micro teeth on the knife edge for the best cutting result.

The handles :

Our handles are made up of different materials :

- ABS = a flexible synthetic material which is perfectly smooth and therefore offers no hold for bacteria. This material is the norm in all professional kitchens.

- South American rosewood = a hard wood which stands up well to washing and detergents.

- Dark Indonesian rosewood = we are using up a stock of more than 100 year old wood.

- French olive wood = for knives used with strength like oyster knives. Even wet this wood offers an excellent grip.

Our rivets are made of brass or aluminium and are perfectly smooth.
