Washing:
Our knives are machine-washable, but the salt contained in the washing powder has a tendency to blunt the cutting edge, and in particular the microdentures. Ideally, hand-wash the knive with washing- up liquid, drain and wax with our Special Food Compatible Wax, see below.
Sharpening:
Do not use a steel, sharpening wheel or tungsten bars.
You have to protect the vertical teeth of the cutting edge, and therefore need to sharpen at right angles to it.
The ideal procedure is to use a diamond-based tool or a Pyrennean Stone. We recommend our Diamant Knife Sharpener.
